Since I'm On a Recipe Kick...

Here are a few fun, yummies that have been happening in the Moss household.


Cinnamon Vanilla Protein Oatmeal Pancakes:

I think pancakes are a once in a while thing and when we make them, we pack them with a ton of goodness to make them better for you. (They also don't make you feel so ick.)

1/2 c pancake mix
1 c oatmeal
1-2 spoonfuls vanilla protein powder
1 tsp cinnamon
1/2 tbsp flax seed
1-2 bananas (optional)
1/4 c berries (optional)
1 c milk or water

Prepare just like regular pancakes. If it's a special day, Isaiah will get a little syrup but they don't need it. They're very sweet on their own. They're also VERY filling. I gave Darren two the other day (he can usually throw down at ihop) and he looked at me like, "Are you putting me on a diet?" But he was totally stuffed. You can also freeze and toast later for a quick breakfast.


Killer Dave's French Toast

Ever had Killer Dave's bread from Costco? You should. It's so good and good for you. It's one of those "loaded" breads and Isaiah likes it with a little butter for breakfast. One thing Isaiah won't eat is eggs. It's so odd. I love eggs. I ate them pregnant and nursing so I figured he'd like them too (like almost everything else I eat). No such luck...so far. So I decided to make French toast in an attempt to just get him to consume them. Success!

2-4 slices Killer Dave's bread
2 eggs
1 tsp cinnamon

Scramble eggs and cinnamon, dip bread, and pan fry in coconut oil. Serve with fruit and cream cheese (yum!) or syrup if it's a special day. Isaiah calls these pancakes too. :)

Isaiah's Morning "Coffee"

I get asked how I usually give Isaiah his vitamins, etc. Here's his recipe while I drink my morning coffee:

1% milk
1 dropper full multi-vitamin
1 drop fluoride
1 tsp Barley Life
Small splash of vanilla creamer (optional...it masks the strong Barley flavor)

Sausage, Peppers, Zucchini, and Ricotta Crock Pot Pasta

1 package Italian sausage (cut up)
1 green pepper (sliced)
1 red pepper (sliced)
3 small zucchinis (cut up)
1 container (like 15 oz) Ricotta
3 Tbsp pesto

Throw in crock pot for 3 hrs on high. Serve with bow tie pasta. Yum!
